HALLOWE’EN ECO MEAL FOR AROUND A POUND

Pumpkin and tomato soup

With Halloween just around the corner, here is a super simple way to make sure that if you buy a pumpkin, all the goodness inside doesn’t go to waste. All you need  to whip up a tasty Pumpkin and tomato soup. This one will serve 3 people:

Flesh from one pumpkin

One tin of tomatoes, ideally organic (Organic farms have 50% more biodiversity)

Sunflower or rapeseed oil

Four garlic cloves (organic is good!)

Two onions (organic is tasty 😀)

Chilli or paprika (amount depending on your appetite for heat 😛!)

Ground coriander (2/3 of teaspooon)

1 stock cube to make 1.5-2 pints of stock, depending on pumpkin size (if it has palm oil, check it’s sustainable on Giki app)

Nice crusty bread (check if it contains palm oil, that it’s sustainable)

 

Simply chop the onions and sweat them in some oil. Then add the crushed garlic and cook for a couple of minutes. Next add all the other ingredients and cook for 45 minutes to an hour. Then all you have to do is blend it up, let it cool a little and serve with some nice crusty bread, and 😉….feel good about eating the pumpkin, rather than binning it! And all the ingredients here have a low carbon footprint, and if you get lucky, you might find the onions and garlic without packaging, as their skin is as good a protection as any!

In total, the cost for this per person is exactly £1, or a little over a pound if you include the bread.
